Food Shida style specialty! Authentic braised pork "Rafute" made with brown sugar and awamori
``Rafute'', which is made by slowly boiling chunks of pork with brown sugar, soy sauce, and awamori, is our specialty! The difference from regular pork braised pork is that it is simmered in Okinawa's shochu called awamori. Awamori, which has a high alcohol content, softens the meat and removes odors. Since it is simmered for over half a day, it falls apart easily when you put chopsticks on it, and the fat melts when you put it in your mouth! Be sure to try the awamori, which goes perfectly with the rich flavor of slowly simmered Rafute.
