We prepare 10 to 15 whole chickens and make them into yakitori every day. Therefore, we are able to prepare yakitori from rare parts, such as those that can only be harvested one piece for two birds or one piece for three birds. Not only rare parts, but thigh and breast meat, which are often thought of as standard meat, can actually be divided into even more detailed parts. By discerning the quality of the meat, using delicate knife handling, and careful skewering, you may be surprised to find a piece that is different from your preconceptions. Please enjoy this book that we have carefully considered.

We are particular about the freshness of the Hinai chicken, and each piece of yakitori is carefully prepared to match the meat quality, and the finishing touches transform it into a variety of expressions. Craftsmen create exquisite temperature differences depending on the position of the grill to bring out the unique characteristics of each ingredient.

The biggest feature is that the product is delivered directly to the store from the production manager, so it can be delivered to the store via the shortest route. By doing so, you can use chicken that is fresh enough to be eaten as sashimi every day.
