Is counter Sushi made by silent craftsmen? No, there are some stores that don't. Sushi where you can have a friendly conversation and enjoy the triple combination of Sushi, sake, and conversation is also great! Several hours pass quickly in the spacious, clean, and bright interior/counter. ———————————— What we ordered today was selection Course (8,470 yen), 3 types of alcoholic beverages • Champagne (1,000 yen) • Black Oolong High (700 yen) • Yamagata Masamune Simmering Plum Wine ( 800 yen) *Menu as of March 2024. The menu will be updated once every two months. ◼︎Appetizer Sea bream topped with plenty of ``Awayuki Salt'', a mixture of rice malt and salt, and sesame tofu. This was my first time trying Awayuki salt, and unlike regular salt, the spiciness is quite mild, so I don't have any problems even if I eat a lot of it! You'll be surprised at how well it pulls out the ingredients! Sesame tofu has a similar texture to Okinawa's Jimami tofu. ◼︎The nigiri Sushi was in no particular order, but we had red sea bream, medium fatty tuna, large fatty tuna, conger eel, and tuna. Aged fish has depth...! There is a different quality to Sushi that is known for its freshness. ◼︎Simmered Simmered dish and liver Delicious things about liver...! There is no harsh taste or odor at all. According to the chef, boiling the abalone with daikon radish and ginger brings out its softness and flavor. Moreover, the radish seems to be steamed to soften the fibers. I couldn't help but feel excited at the amount of effort that went into making this small dish ♡ ◼︎I had the hand-rolled Sushi urchin, kanpyo, and green onion taku. Once you eat all of them in one bite, it's heaven! ! In particular, they seem to use the highest quality seaweed. The crispness and aroma of seaweed brings all the ingredients together. ◼︎〆 We had red miso soup, Castella, strawberry and hozuki. I was especially surprised by Hozuki. I ate it for the first time in my life, and it felt like it was right in the middle of vegetables and fruits...! It tastes like a combination of tomato and fig...! It tastes like nothing I've ever eaten! Delicious and delicious ——————————— Very satisfied (*´-`) In particular, the staff at the counter were friendly and politely responded to our persistent questions about the ingredients. Ta. thank you. It was a restaurant that I would want to take someone with me to again.
