一時期、蒲田に在住していたころは訪れることが出来なかった初音寿鮨。食通の友人からの誘いもあり、2023年末～2024年にかけて、大将がイタリア訪問中は弟子が握る為値段もリーズナブルとのことで、初の訪問と相成った。
外見からは想像できない美しい店内は、テレビで見た映像そのままで、興奮が高まる。
最初にシャリの味見をさせてくれて、温かい酢飯の味を感じながら、突き出しからスタート。
最初に大トロの漬けを作るパフォーマンスから始まり、マグロの赤身からスタート。ねっとりとした濃厚なマグロにうならされる。
