ChefMr. Katsu Nakaji (Nakajikatsu) operates from two locations: Kamata and Milan, Italy
Born in 1963, he is the fourth generation owner of Hatsune Sushi, which was founded in 1893. Since he was a child, he decided to become a sushi chef after watching his father, Isao. After training in Ginza, he took over the family business and operated in Kamata for over 30 years, but now he spends half the year working in Kamata and half the year working in Milan, Italy.
Food The ultimate sushi experience begins with cutting the rice
The event starts at 6pm, with the sushi rice being prepared right in front of the guests using rice cooked in a charcoal pot at 400°C. First, a few appetizers are served, and then the sushi is prepared with just nigiri, varying in speed and intensity, captivating the gourmets. The Hatsune Sushi style has been continued since the time of the previous owner, Nakaji, with the sushi rice being carefully prepared and the sushi being served with nigiri toppings such as conger eel, sweetfish, and monkfish liver, which go well with alcohol. The sushi has earned a reputation for its unparalleled deliciousness.

At first glance, the stylish ivy-covered exterior makes it hard to believe it is a sushi restaurant. Inside, there are two rooms: the "Mountain Room," a main counter with a solid, calm design, and the "Sea Room," with its curved lines reminiscent of waves. Currently, the "Sea Room" is used as a luxurious way to soak in the afterglow of a meal. It symbolizes the restaurant's philosophy that "since customers have made the effort to come here, we want to treat them with hospitality, not just in terms of taste, but also in the space, service, and everything else."
