ビルの地下に降りて店内に入るとお客さんたちが
通はこういう蕎麦を好むとか粋だねとか
ワイワイとそば談義をしている
何となくだがそんな話をするのが似合う雰囲気のお店
外が寒かったので温かい蕎麦を食べようと思ったが
ご主人と話して冷やしの蕎麦に
ご主人曰く、温かい蕎麦は香りやのど越しを損なうので
冷しで食べてほしいが、温かい蕎麦へのニーズもあって
メニューに置いているそう
◎錦そば（冷）
香り高くのど越しのいい細切りの蕎麦
その上には、
シャキシャキなごぼう･にんじん･だいこんの千切り、
ホワホワで柔らかく優しい甘さの玉子焼き、
そば貝割れとも呼ばれる蕎麦の新芽（スプラウト）、
天かすなどが乗っている
つゆは提供されてから注ぐ後がけタイプ
スッキリめのつゆで出汁の効き香り高い
程よい硬さのしまった蕎麦の麺、シャキシャキな千切り野菜、ホワホワで柔らかな玉子焼き、それぞれの食感の違いが楽しく、それらがコクのあるスッキリめのつゆと相まっておいしい
次回「錦そは（冷）」を食べる時は大根おろしなども
トッピングして食べてみようかな
