お店の佇まいは非常にカジュアルで入りやすい
この日はフロマージュドテッド、仔羊のロティ、鮮魚を使ったサラダ、ブイヤベースを頂きました
スペシャリテのブイヤベースは甲殻類やフュメドポワソン、貝のお出汁が効いていて最後にお米を入れるのを見越した濃い目のお味
提供前にハンドミキサーで軽いカプチーノ状にして提供されます
子羊は綺麗なロゼ色、骨周りの脂はコンフィでカリカリにしており非常に食べやすい
ソースは、力強いジュドアニョーをベースとしたソース
赤身の部分と脂身の部分にはレモンのピューレが塗られており脂身まで残さず食べられる工夫を感じました
