ChefYoshiaki Shindo - Reliable techniques for freely manipulating seasonal ingredients
Born in Kanagawa Prefecture. After working at ``Osuhiroki'' in 1997, he inherited Mr. Robuchon's spirit at ``L'Atelier de Joel Robuchon'' in 2003. After that, he worked at Bon Pinard in 2006, and then returned to L'Atelier de Joël Robuchon as sous chef in 2007. The following year, he received two Michelin stars. In 2012, he became the head chef of ``Jontyash'' and received one Michelin star for five consecutive years. In 2018, he finally became independent. Opened "Lalium" which is the culmination of his work.
Food [Specialty] A plate of black abalone
"A plate of black abalone" is Shindo's number one specialty. The finest black abalone from Shimane is carefully steamed for 8 hours, and each season is elaborated to create a dish that brings out its charm. At the opening of L'Atelier de Joel Robuchon in 2003, he shared the joys and sorrows with Chef Shindo while working as a sommelier. Later, he worked as the business concept launcher and opening manager for Ginza Pero, BIKINI, and Cantina Siciliana, as well as opening manager and sommelier at Restaurants Zurriola, before finally becoming the manager of Lalium. On Shirokanedai Platinum Street, the famous French cuisine restaurant "OZAWA", which has been loved for about 30 years since its establishment, has relocated and taken over its former location.
