◯野菜のアミューズ
オレガノを混ぜたチップス、聖護院大根をくり抜いて中にクリムチーズ、蕗の薹のリゾットコロッケ、根菜類のハーブ煮込み。
◯白魚とカリフラワーのグラタン
熱々のグラタンには白魚とカリフラワーとチーズがたっぷり。
◯鰆とジャガイモ
鰆はスモークマリネして。鰆は玉ねぎとウイキョウと和えていて下にはジャガイモのペーストがひいてあります。
ヨーグルトソースでさっぱりと。
◯フェデリーニ 穴子とキャベツ
フェデリーニは少し芯が残り過ぎていて私には塩気も強くしょっぱかったです。穴子とキャベツの組み合わせは良かったのでパスタが残念でした。
◯カサレッチェ トレビス
カサレッチェはショートパスタ。断面がS字の形をしてて面白いです。トレビスとプラリネナッツをパスタに合わせて。トレビスの苦味とプラリネの甘さがなんとも不思議な味でした。
◯地鶏のソテーと人参
鶏肉は低温調理でしっとりやわらかく皮目はパリッと。人参はピクルスにして焼いてます。
◯デザート
ココナッツのブランマンジェの上に洋梨とゼラニウムのアイスを合わせて。
◯カフェと小菓子
ハーブティーとマカロン。
お料理は素材を活かした繊細な味で見た目も綺麗です。
席と席が離れているので周りを気にせず食事が出来ました。
接客は親切で丁寧で良かったです。
