週末の夫とのディナーで利用しました。
我が家から中目黒は歩いて行くと少し遠いので、なかなか足を伸ばすことも少ないのですが、こちらのお店のコンセプトが気になって訪問。
シェフの方の出生地であるベネズエラ、そしてイタリアと日本の個性を取り入れたお料理だそうです。
Fioritaコースと、ワインペアリングをお願いしました。
コースはアミューズ2種から。
一口サイズの蟹入りクスクスサラダ、青のり入りゼッポリーネの雲丹乗せの2つ。
南イタリア風のお料理からですね。
ゼッポリーネがフワフワで、雲丹とのマッチングがいいです。スッキリした泡と合います。
続いて、テーブルに大変の生アスパラガスが運ばれて来ます。面白いプレゼンテーション。Jet Farmという農家さんから仕入れているそうで、しっかり大きめのグリーンアスパラガスです。お料理は、こちらをバーニャカウダソースで仕立てたサラダ。生で薄く削いだアスパラガスと、焼きアスパラガスのコンビネーションが新鮮。サルデーニャの白ワインと好相性でした。
続いて、ポーチドエッグに生ハムとクリームソースをかけた前菜。繊細に削り出された生ハムが滑らかです。おいしくないはずがない組み合わせ。これはむしろワインのほうが主役なのかなと思いました。熟成度高いシャルドネで、ワインが進みます。
続いて、牛タンのボッリートです。イタリアでもぐっと北部に動いた感じがしますね。トマトのコンフィが添えられています。繊細で洗練されたボッリートの雰囲気。
ここから、パスタが二皿です。1つ目は豆の入ったトマトラグー風ソースで、平麺の手打ちパスタ。二つ目がスペシャリテのアニョロッティでした。
どちらもおいしいのですが、ポーチドエッグあたりから歯ごたえや味の傾向が少し似ているものが続いていることがコースとしては気になります。食材としてはそれなりに変化あるのですが、もう少しシャキッとした刺激のようなものがあれば。個人的には、平麺あたりで変化つけていただきたかったですね。
メインは蝦夷鹿のバナナの葉包焼き。ヤングコーン添え。こちらの火入れ、とてもよいとおもいました。非常に滑らかな蝦夷鹿です。蝦夷鹿苦手な方でも、きっと好きになるのではないでしょうか。野性味より、繊細で滑らかさが好きな方向けに思います。
ジューシーで濃い赤ワインがよく合います。
デザートはブランマンジェ。レモンの香りが相性よく合いますおいしくいただきました。ただここまでのプレゼンテーションに比較して少し違和感が。和風なのかとも思いますが、もう少し見た目の心地よさがほしいところかなと思います。
最後はお茶菓子とエスプレッソをいただきました。
全体に、コースの構成、後半がもう一息という感じですが、イタリアも色々な地方の空気を感じられるお料理構成で、さらに産直野菜やベネズエラの要素もあり、旅行しているような楽しさがあります。独特の世界観は訪れる価値ありと思います。
お値段的にも納得感あります。
ワインの解説は、もう少しストーリーを聞きたいなと思いました。ビオワインがほとんどだったようなのですが、そのあたりのお話はまったく出なかったのは残念でした。
とはいえ、素敵なレストランです。
桜の頃は、きっと窓際は綺麗でしょうね！再訪できたらいいなと思います。
