そんな古民家の中にあるのが天麩羅百名店の「みやしろ」。
POINT
和紙を使った空間装飾や木の温もりを感じるカウンター席、大人好みの上質な空間で楽しめるのは、毎月変わるおまかせコース一択のみ。食通らにも一目置かれる一軒
出汁にこだわった季節のお椀やフレッシュな野菜を使った〆のご飯など、まったく重くない、全ての料理が温度・熟成・食感にこだわった構成
コースに合わせた日本酒やワインも豊富
ミシュランガイド東京2024にて5年連続一つ星を獲得した同店。海外の観光客の方も含め、賑わいを見せた贅沢な一夜。平日前半でも満席でした。
「九十九里の蛤と菜の花のおひたし」
菜の花はえぐみがなく、大ぶりの蛤のぬくい舌触りととろけるような食感が印象的。
「勝浦の真鯛」
カシューナッツを揚げたものと甘めの醤油で和えたもの。カイワレ大根の辛味とミョウガでさっぱりとした仕上がりに。
～大根おろしと天つゆ、自家製の塩でいただく天麩羅～
「車海老」サクッと甘く軽やか。
「えびてん寿司」甘ダレで。手渡しで提供してくれ、大将の人柄の良さがダイレクトに伝わってきます…。
「車海老のあご足」こちらはパリッと。前半で調理法の異なる海老の食べ比べが出来ちゃいます
「長野のアスパラ」一本丸ごと、根元を温度を変えて食べ比べ。後者はネギのようなしなやかさ。部位や温度でこんなに違うんですね！
「アワビの肝のソースしゃぶしゃぶ」
鮑がこの上なく新鮮！まずはそのまま、食感を楽しむもよし。30秒煮込んで後に入れてくれる瑞々しいウニとおむすびの天ぷらを加え、くずしてリゾットにするもよし。みやしろさんの遊び心が光ります。
「姫路のコ玉ねぎ」甘みが駆け抜ける！
「千葉・竹岡のめごち」 特徴がある白身。キスのような柔らかい食感。
「富山の白海老とキャビア」シンプルな構成なのに繊細な甘みを引き出しています。
「朝採れの京都産タケノコ」これ、めっちゃくちゃおいしい！母親も大絶賛。ヤングコーンのようなシャキッとした食感。本当にこんなに美味しいタケノコは初めてです…。
「山口の甘鯛」うろこがカダイフのように盛りあがっており、美味しい。
「カラスミソバ」カラスミを贅沢に目の前で削り倒してくれます♪これはぜひ日本酒ペアリングで(っ´∀｀c)
「栃木のしいたけ」とっても肉厚！
「シャトーブリアン湯葉巻き」大葉がアクセントなり、さっぱり柔らかい。最初は2粒黒コショウを口に含み、岩塩をつけていただくという肉の旨味を引き立てる食べ方が推奨されています。
「揚げた海苔・ウニ・マグロの天ぷら」二度目の手渡し☆薄すぎず厚すぎない衣で、外はサクッ、具材はふっくらな食感は食す価値あり。
「舞鶴のさわら」バラ色の断面が客席の高揚感を高めます。何もつけずに そのあとは塩で。
「千葉のキス」一週間熟成させたそう。柔らかい。
「天バラトマトご飯」昆布の出汁で炊き、お塩とお酒だけで味付けしたご飯。まずはトマトの酸味と甘みを全身で味わったあと、いよいよ揚げたての海老や野菜が入った天ぷらを目の前でくずしていただきます☆彡ザクザクとした音がすでに更なる食欲を掻き立てる…！
優しい味に仕上げられた出汁が、一夜の締めくくりをしてくれます。
「塩羊羹とお抹茶」ラストは甘味で。ごちそうさまでした。
食事のペースに合わせて、揚げたてのてんぷらを提供してくださり、ありがとうございます！革命的とも言える野菜、魚、肉くまなくカバーした天ぷらや型にハマらない前菜や〆のご飯に感動した1日でした。
