Second visit. I made a reservation for the full course with champagne, and the chef explained the choices I could make among the courses, and I chose carpaccio for the appetizer and duck meat for the main course. The rosé champagne has a gorgeous, light aroma that goes well with the amuse of Japanese soup stock. Carpaccio, soup of the day, main fish, white Pouilly-Fumé with a barrel feel, main meat, 3 additional forms, red Saint-Émilion Merlot, tiramisu and coffee, and finally I had a rare apricot after-dinner drink. The sour, bitter, salty, and sweet flavors of the carpaccio's vegetables, fish, and sauce are intricately intertwined and washed down with Pouilly-Fumé. The best! The fish dishes are made by the chef's skill, the skin is fragrant, the meat is tender, and it's delicious! One word. The duck meat is fragrant and lightly spiced, with a crispy texture, flavor, and the Saint-Emilion wraps it softly. At the beginning of the dinner, the chef says, ``You've been here before, right?'' and I'm moved by this. Even if you only have one surgery, you will be drawn to his careful cooking and service, and above all, his personality. It was a great night, thank you for the meal.
