In Japan, many Restaurants establish a standard "cost ratio" and price their wines by calculating backwards from the purchase price. For example, if the cost ratio is 30%, a wine purchased at 3,000 yen will be priced at 10,000 yen (restaurant 's profit is 7,000 yen) and offered to the customer.
