As always, the gentle hands of the young chef, the explanations of the ingredients are excellent and easy to understand, and the hand-made gari feels like a craftsman's work. They put a lot of effort into everything other than the nigiri, so you can wait in front of the chef to see what will come out next. It's fun just being there. This restaurant requires reservations.
