We use Amakusa Daioh, a rare local chicken that is said to be a myth. Under a strict management system, the bait is natural food. We raise our chickens with care and passion, spending 3 to 4 times more than regular chickens. At our store, we only use female chickens that have mild fat. It is then carefully aged in the store for 5 to 7 days and then carefully handled. Bring out the flavor to the limit! Aged chicken has a different flavor and depth of flavor. Especially recommended is the ``Dakimaki Negima''. The crispness of the skin due to aging, the flavor of the meat, and the sweetness of the green onions combine to create an exquisite bite.

Our commitment to yakitori goes beyond just the chicken. The way the ingredients are cut and skewered takes advantage of their texture. It is then grilled using the highest quality Kishu Bincho charcoal. A custom-made grill that is deeper than usual increases the heat and locks in the flavor all at once! Even though it's simple, we add essence to it with things like sansho oil, chicken oil, and homemade seasonings. You can also enjoy rare parts. Our store operates on an "Omakase Stop System". Torimatsu's recommendation is "Yakitori x Wine." We have around 17 types of wine, mainly natural wines, depending on the season. Most of the drinks are easy to drink and have a light flavor, with a refreshing taste that gently nestles into the yakitori. When choosing wines, we not only pay attention to taste, but also carefully select wines from producers with passion. You can also enjoy pairing. We also have premium wine Kenzo Estate, beer, sake, sour, etc., so choose the drink of your choice.

It features a U-shaped counter made of ginkgo wood that resembles a sushi restaurant. You can enjoy the immersive experience of the master's movements and brilliant techniques. The setting is luxurious, but the air is warm. In a stylish and lively atmosphere, you will be welcomed by friendly staff who love yakitori. You can enjoy it without straining your shoulders or elbows. The exhaust is also well-ventilated, so you don't have to worry about smoke or odors.
