Straw-grilled bonito is grilled over a powerful flame that reaches 800-900 degrees Celsius.Since the bonito is grilled at a high temperature all at once, the umami is condensed and the surface is instantly and evenly grilled, locking in the flavor of the bonito. By not allowing heat to penetrate inside, you can maintain the freshness of the food. Additionally, the smoke and aroma emitted when the straw burns enhances the flavor of the material.
