吉祥寺駅前の雑居ビル2階に店舗を構える『鮨 富かわ』様
『ホテルオークラアムステルダム』和食総料理長 、日本食普及親善大使、ミシュラン11年連続受賞の富川正則氏の愛弟子 大村亮太氏が師匠の名を屋号に掲げその精神を受け継ぐ期待の新店です
GW某日、夫婦で17時予約で訪店
今回戴いたのは
● 《お飲み物付き》【旬の握りとおつまみ】おまかせ 20品 16900円
ドリンクはペアリングを日本酒おまかせ、日本酒辛口、ティーから選択します
ビール、ハイボール、ソフトドリンクも料金内でグラス交換制で注文可能です
私達は乾杯に瓶ビール、その後は日本酒おまかせのペアリングを戴きました

定番の生姜に数種類の野菜のピクルスが混ぜられていて華やか
・鮑、車海老、ホワイトアスパラ
バジル酢味噌を添えて
・桜鱒
ハーブスプラウトを添えて
・あんパン
あん肝とトーストのハーモニー
・アオリイカ
驚くほど柔らかい
・中トロ
お腹の部分と背中の部分の2枚重ね
・炙り鯖棒鮨
シャリが小さくオシャレな形状
・平貝・黄身醤油
黄身醤油の方にも平貝が入っていました
・舎利ゾット
あさり出汁、チーズと雲丹のハーモニー
・スズキ
スズキとシャリの間に唐墨が挟んでありました
・アジ
上にはネギと生姜をすり潰して和えたものが乗せられています
そうすることでニンニクと同じ成分が出るそうです
・茶碗蒸し
上からアメリケーヌソース、ホタテ貝入り茶碗蒸し、じゃがいもペーストの3層になっていました

酢で締めて炙って酢橘を絞って
・マグロ赤身漬け
切り込みが入れられていることで唯一無二の食感に仕上がっていました
・ノドグロ蒸し寿司
笹の香りが濃厚

トロと舎利の間にはフォアグラが
上からトリュフと金粉を散りばめて

イタリアのアイスクリームピスタチオ添え
●トロたく 2500円
トロたくと雲丹キャビアは別料金で追加可能
とりあえずトロたくを追加しましたがこれが抜群に美味しかったです
大将とトロのツーショットは美男美女で映えますね
大将がアムステルダムで長く修行されていただけあり
お鮨の基本は忠実に守りながらも西洋のエッセンスや映える要素を積極的に取り入れられていてとても楽しかったです
日本酒のペアリングも良かったですがワインも合いそうなコースだと思います
