元々は西麻布の住宅街にあったようです。
醤油味の琥珀を注文。700円。
大盛は100円増し。
この日は特別にチャーシュートッピングサービスでした。
醤油は出汁がしっかり感じられ、見た目より濃くはありません。
麺は固めで、食感がいいです。
醤油ラーメンといえば、魚粉でパンチを効かせたもの、
昔懐かしさを狙ったもの、トンコツ醤油が多いですが、
それらとは一線を画したこちらは見事だと思います。
八王子ラーメンを昇華させたような印象です。
玉ねぎみじん切りの甘みで、味にアクセントが付きます。
焦がしシナチクとタマネギのみじん切りの香ばしさがたまりません。
ロース肉のチャーシューは大きくて、かみごたえがありジューシーです。
塩味のパールは750円。
高級に干しとオリーブ油を利用しているようです。
塩はパンチが聞いていて、ややとろみがああります。
しょっぱくはありません。
塩というよりも魚介の旨味が全面に出ています。
醤油・塩ともにここまでおいしいお店はなかなかありません。
府中のふくみみ、麺総研かなで・改、ひびきが醤油ラーメンの個人的な最高峰ですが、
こちらも同じようなおいしさだと思います。
