KAEN uses a fireplace and a wood-fired oven, a primitive method of cooking that uses two wood fires as its heat source, and takes great care in cooking, making the best use of the ingredients. With a focus on local first, we use carefully selected ingredients provided by local producers, weave and edit the traditions and food culture that are rooted in this area, and create stories that give you a sense of the identity of the area, as if you were eating the area as it is. JAPANCRAFTPIZZA is an original Japanese pizza made by Japanese people, for Japanese people, with all the ingredients, including wheat, cheese, and yeast, made in Japan. The yeast used is Lacancella yeast collected from cherry blossoms in Tottori.
