東京・富山の師弟店巡りで出会った、
和食料理人の本気のおむすび。
地元の米作り名人の米を南部鉄器の羽釜で炊いて、
ほとんど蒸らさず曲げわっぱのおひつで水分調整。
しっかりフワッと握ったおむすびは、香り高く味わい深い。
おにぎり専門店とはひと味違う、冨久屋さんの名物の一つ。
店主は霞町すゑとみのオープン時から、長年末冨さんの元で研鑽された実力派。
装飾や無駄を削ぎ落とした、引き算系の割烹料理。
醤油タレをハケで塗って焼き上げた鰤の照焼きは、皮目はパリッと香ばしく、脂の乗った身はプリッと弾ける。
