[Origin of Houtou] The word "hauchi Houtou" appears in "The Pillow Book." This refers to the Koshu-style "Houtou," which is "the name for noodles that are stretched and cut into squares," meaning udon
... noodles cut into wide strips. This later became "Houtou," and it is said that the origin of Koshu's specialty Houtou is when Takeda Shingen worked to popularize it as a way to maintain the health of his Koshu troops. At our restaurant, we offer "Okumura Houtou," a mild-tasting Houtou that has been eaten at home since ancient times, Houtou "Oyaji Houtou" a traditional Houtou with spicy meat, and we hope to convey the deliciousness of Yamanashi Prefecture to all of our customers who visit us.
