名古屋では最も予約が取りにくい一軒、鮨旬美西川へ。
今回の名古屋お散歩の目的の一軒です。
ストレートのカウンターは幅が広く余裕があっていいですね。
2箇所に分福茶釜が設置されています。(≧∀≦)
ほどよい酸味のある赤酢ベースの舎利、好みです。
特筆すべきは駿河湾の天然車海老。
一瞬湯通しした後に氷水で急冷、いわゆるミキュイの仕上げです。
車海老がプチプチっと切れる歯応え、そして甘み、これはとにかくインパクトがありました。
ちょい炙りで出してくれる錦の吉野寿司以来、旨い車海老でした。
他の料理もまずまず。
