The owner, Shinji Nishikawa, trained under the first head chef of Fukuzushi, a famous restaurant beloved for many years in Nagoya. The course menu features local Aichi and Tokai ingredients paired with sushi rice cut with black vinegar, red vinegar, and rice vinegar.
