We mainly stock prawns, shellfish, and white fish from Mikawa Bay, which is famous throughout the country, and we also carefully select and purchase fresh fish from all over the country according to the season.

For the tuna we purchase from Toyosu Market, we use red vinegar so that it doesn't overpower the toppings, and for white meat and other light ingredients, we use rice vinegar sushi to match the toppings.
