We use the finest dashi stock made by carefully boiling kelp, bonito, dried sardines, etc. for a long time at our restaurant. The udon noodles are medium-thin noodles that go well with Kasu udon, ordered from Takahashi Seimenjo, a famous noodle factory in Maizuru City, Kyoto Prefecture. From the soup stock to the noodles, we have taken great care in everything, without cutting corners.
