ChefKarashima Hiroshi - Unique sushi woven with unwavering conviction
Influenced by his father, a sushi chef, his dream since childhood has been to become the best sushi chef in Japan. To make this honest dream a reality, he never compromised and forged ahead on the path to becoming a sushi chef. Prior to his full-scale training in sushi, he began training in Japanese Cuisine at a famous restaurant in the Kansai region, and completed it to the level where he could open his own restaurant. At the age of 30, he opened his own restaurant, Sushi Karashima, where he pursues the best sushi every day, partly by self-study.

"The more you eat, the hungrier you get." The nigiri that embody Karashima's ideal can be ordered a la carte after selection course is over. In addition to the ingredients featured in the course, there are always about 10 to 15 other types available. It probably takes a lot of time and effort to purchase and prepare the ingredients, but they probably place more importance on the satisfaction of their guests. Sometimes they even serve rare fish from the Kyushu coast that you won't find at other restaurants.
SpaceA refined sense of beauty in a simple space
Located in a quiet residential area. The casual sign and the approach to the restaurant give a sense of the owner's aesthetic sense. The interior of the restaurant has a dignified atmosphere with a black and white color scheme. The main attraction in this simple space without any paintings or flowers is, of course, the sushi. The lighting that shines like a spotlight on the tsukedai (sushi tray) at each seat makes the sushi that Chef Karashima has put his heart and soul into stand out clearly.
