完全予約制でその日使うものだけを仕入れたり、畑で採ってきて使うようにしています。また、豊作時の行き場のなくした野菜の有効活用法として、まず乾燥野菜にします。その後パウダーにしたり、または煮出してブイヨン仕立てにしたりなど応用しています。
サステナブル食材の活用
菜種油の工場で出た菜種の絞りかすの再利用。絞りかすを焼くといい香りがするので、その香りで食材を燻すなどしています。

自治体が害獣駆除した猪や鹿は、引き取ってジビエとして調理し、おいしくいただくようにしております。
