After 7 years of training at Kokura's famous restaurant "Sushi Tsubasa", he became independent. The restaurant was named after his father's Teppan-yaki restaurant `` Teppan-yaki Sawa,'' with the desire to work together to make the restaurant more exciting. In order to bring out the delicate flavor of locally caught white fish and shellfish, Sushi is made in a style inherited from ``Okuramae'', which uses salt and sudachi to bring out the sweetness and flavor of fresh fish, without using nikiri soy sauce. It is also characterized by the freedom of creation. The restaurant fascinates people with its ``Ogura-style'' cuisine, which is perfected just like kaiseki cuisine.

The menu is limited to selection courses for both lunch and dinner. Lunch starts with two snacks, and ends with around 10 pieces of nigiri, a bowl of rice, and an egg. It is a luxurious meal made with plenty of ingredients carefully selected by the chef. For dinner, we use only the finest ingredients carefully selected by the owner himself. We want you to enjoy the carefully crafted handiwork with your own eyes and using all your five senses to the fullest.
