``Date tuna'' is characterized by its fine-grained, refreshing fat. Bluefin tuna's unique rich aroma and melt-in-the-mouth texture are comparable to natural products. We purchase our meat in blocks, so if you're lucky, you can even enjoy rare parts. All of the other seasonal fish are carefully selected by the chef himself at the Nagahama Fresh Fish Market. We are also proud of our sushi rice, which is held in such a way that it melts easily in your mouth.

In order to enjoy the delicious sushi, we have also taken special care in providing counter seats. The counter is made of a single piece of Japanese cypress from Saga Prefecture, which I was forced to obtain from the shrine.
