We put a lot of effort into bringing out the flavor to the fullest and making it delicious. Sometimes we purchase rare fish that can only be encountered a few times a year. We are particular about the sushi, and depending on the ingredients, we use white shari and red shari to provide the best balance. The rice is a blend of Hokkaido's ``Nanatsuboshi'' and Niigata's ``Koshihikari,'' and is aged for 3 years to create a rice that is more suitable for sushi.
