Chef Nishimaki started his career in sushi after being asked if he would like to try making sushi when he was in culinary school. It has been six and a half years since I started ``Sushi Saiko'' after honing my skills at sushi restaurants in Tsukiji and Sapporo. Chef Nishimaki is particular about ``enjoying freshly made food.'' Depending on the ingredients, freshly made sushi may be handed directly to the customer. This is because the delicious state of the food will pass if it remains on the plate. Please enjoy the finest sushi kept in the best condition.

Susukino is lined with many restaurants. ``Sushi Saiko'' is located on the first floor of a building on Minami Rokujo West. When you step through the noren curtain and step into the store, you will be greeted by a Japanese-style space that exudes the warmth of wood. The interior uses a wood from Hokkaido called ``Tamo.'' It's clean and has a relaxing atmosphere. Inside the store, there are only 10 L-shaped [counter seats] made from a single piece of Japanese cypress. The restaurant is designed so that the head chef can prepare meals based on the pace of the customer's meal.

"Sushi Saiko" only offers "selection". We only offer one piece of each topping. The other dishes are also modest and don't have too many dishes. The reason is that we want you to taste a variety of dishes little by little. When I think, ``I want to eat a little more,'' I push back even more. We believe that the secret to being satisfied is to move on to the next dish in that state, and then the next dish. Spend a blissful time slowly savoring the finest cuisine little by little.

The sushi and dishes we offer change depending on the season and daily availability. One of the attractions is encountering rare ingredients unique to Hokkaido, such as "Kinki" and "Godzilla shrimp."
