First of all, the rice is a blend of new and old Yumepirika rice from Hokkaido, and the ratio of the blend is changed four times a year depending on the season. The rice is washed and soaked with great care so as not to spoil its deliciousness, and then the rice is cooked in a custom-made Nambu iron pot.
