ChefTatsuya Kishimoto: A chef with a penchant for perfection
Born in Hyogo Prefecture in 1975. During his training in a rural town in France, he learned a lot from the simple and down-to-earth food and lifestyle of the French people, which became a guide for his future endeavors. He opened "Bec" in May 2011. The restaurant became popular due to its reputation for its French home cooking, born from a thorough pursuit of flavor that spares no effort, and its wines selected with a unique perspective. He continues to pursue his own ideals while managing the restaurant alone, with a holistic view of the food, atmosphere, and customer service.

Chef Kishimoto believes in the natural relationship between food and wine. He places great importance on the ingredients, and to bring out their flavor, he simmers the vegetable soup for about 10 hours, and roasts and rests the Huergot Charentais duck for about 40 minutes. Every dish is an exquisite delicacy that can only be enjoyed at "Bec." In addition, all the dishes are delicious even when cooled, so they are also great to enjoy slowly with a drink. This is the pride of Bistro that is particular about wine.
