Only when the owner eats and loves fish is he able to see the true season. Today's markets tend to be too grateful for first-time products, and in rural areas, products are kept at the beach in order to ensure the number of shipments, resulting in some products losing their original season and freshness. Therefore, we carefully examine each item in the market and purchase only truly delicious ingredients.
Food Because it's really good food
Have you ever heard of "pulling sashimi"? The basic principle of Japanese-style meal is ``pulling.'' This is synonymous with removing the excess from a rough stone, cutting it, polishing it, and finishing it into a ball, like a gemstone. I think that gorgeousness and color are naturally necessary in cooking, but at our restaurant we focus on bringing out the original deliciousness of the ingredients without overdoing them or adding too much seasoning.
Food Do not rely on chemical seasonings
Rather than questioning the pros and cons of chemical seasonings, we are particular about purchasing because we want to seek and provide the ``original'' taste of seasonal ingredients. That's why we use ``Makonbu'' from Hokkaido and dried bonito flakes from Japan to make our soup stock.
Seasonal ingredients carefully selected from wholesale markets in Toyosu and Yokohama and the finest Tokyo Bay fish caught by the owner.
