奈良での仕事の帰りに京都まで戻って、中国料理 四川で懇親会。
今回は大御所をお連れしたこともあり、ちょっといいお店を選んでもらったのがここだった。
四川料理と言うことで辛いものを予想していたが、全く辛い料理は出なかった。
前菜全てが旨くトマトのスライスは潰れずに良くこんな薄く切れんなーと感動。
蟹とフカヒレのスープ、海老とイカの炒め物は上品な薄味で角煮も旨いし全てにおいて高級感を感じた。
コースの中に四川料理っぽい物が無かったので、つい麻婆豆腐を別注文。
そしてこの麻婆も山椒を多めにかけて美味しく頂きました。
今回初めての経験で「紹興酒に干し梅を入れると旨い」と言う事を教わり、試したところ確かにその通りで紹興酒がまろやかになって旨かった。
今度からは紹興酒には干し梅ですね。
