ChefMotoi Maeda: A pioneer of modern French cuisine
Born in Kyoto in 1976. Having spent his childhood looking at cookbooks instead of picture books and enjoying cooking himself, he naturally decided to pursue a career as a chef. After graduating from high school, he joined what is now the Rihga Royal Hotel Kyoto. After working as a Chinese chef for around 10 years, he travelled to France, where he furthered his training in Burgundy and other areas. After returning to Japan, he honed his skills at "Pittoresque" in Kyoto and "HAJIME" in Osaka, and in January 2012 opened "MOTOI" in Kyoto, where he was born and raised.

"MOTOI" is located in a quiet residential area of Tawarayacho, Kyoto, where many traditional townhouses still remain. This 100-year-old historic mansion, which was used as a kimono shop during the Taisho era, has been renovated and reborn as a Restaurants. You can enjoy a blissful moment in this comfortable space where the traditional beauty of old Japan is beautifully combined with modern, stylish design while looking out at the beautifully maintained courtyard.
Food Enjoy "food with a story" using seasonal ingredients
Maeda has an unusual career, having switched from being a Chinese chef to a French cuisine chef. He believes in cooking sincerely and with integrity, for example by using no thermometer and judging the perfect cooking time with his own eyes. He is particular about the ingredients he uses, and whenever possible, he gathers them himself, such as picking natural watercress in the Kamo River. While incorporating the essence of Chinese cuisine, he values the flow and story of the entire course, allowing you to enjoy the cuisine that only Maeda can create.
He personally selects ingredients and transforms them into a unique dish, a modern French cuisine that embodies the essence of "one host and one guest."
