ChefYoshihiro Murata: Spreading the essence of Japanese Cuisine to the world
Born in 1951 as the eldest son of the owner of Kikunoi, a long-established restaurant in Gion. While studying at Ritsumeikan University, he traveled to France to train in French cuisine, but instead chose to pursue Japanese Cuisine. After graduating, he continued his training at a restaurant in Nagoya, and opened Kikunoi Kiyamachi in 1976. In order to register Japanese-style meal as a UNESCO Intangible Cultural Heritage, he became the vice president of the General Incorporated Association National Council for Japanese-style meal Culture. While serving as the chairman of the Japanese Cuisine Academy, he has received numerous awards, including the Medal with Yellow Ribbon, and continues to work hard to pass on Japanese-style meal traditions.

Using the famous Kikusui well, the same water that Toyotomi Hideyoshi's wife, Kita no Mandokoro, used for the tea ceremony, the third-generation owner, Yoshihiro Murata, serves Kyoto kaiseki cuisine, which could be said to be the pinnacle of kaiseki cuisine.
