まったく予約がとれないレストランがあるという
それが「pesceco」だ
「えっ、そんなの噓でしょう！」と予約を試みたが、
聞いた話の通り、まったく予約がとれない
たまたま、予約枠を持つ友人に誘ってもらい訪問できたが、
長崎の僻地にあって、予約がとれないのは凄いことだ
料理は、創意工夫を凝らした素晴らしい一品ばかり
素材の持ち味をいかにして最大限に引き出し、
自分がイメージする味を一皿に昇華させるか
そのことに徹底していると思えた
シェフの豊富な知識と情報量
これらを駆使して自分らしい表現に練り上げる力が図抜けているとも感じた
料理人ならば、このテクニックを偵察したくもなるだろう笑
この抜きん出た独創性と美学が井上料理なのだと思った
