For the sushi, we use high-quality Koshihikari rice and Yonezawa rice from Yonezawa in Nagano Prefecture, which was used to make gozen rice eaten by the lords of Suwa. Since it does not keep for a long time, we buy it in brown rice and only polish the amount we will use that day. Our specialty is to cook this premium rice, which is made using a method that is gentle on the body, to a firm consistency in a hagama pot. By minimizing sweetness, we bring out the natural flavor of the ingredients. Please enjoy the unique sushi made with a blend of rice vinegar and two types of red vinegar, and the deep flavor that harmonizes with the toppings.

We purposely do not limit our suppliers and carefully select delicious produce in season. Fresh fish is procured with a reliable eye and then processed in an Edomae style that reflects the skill of the chef who trained at a famous restaurant. Enjoy two types of nigiri, a combination of experience and sensibility. In addition to sushi, this plan allows you to enjoy charcoal-grilled dishes, grilled dishes using straw, and snacks sprinkled with Okinawan ingredients such as togari bisu and mebai. Please fully enjoy the ``classy'' Edomae sushi and exquisite dishes that are by no means extravagant.
