Sho's style is all about handmade crafts. Prosciutto served with the appetizer platter is also homemade. We use Kurobuta pork from Kagoshima, and after salting it, we let it mature for about 2 years and finish it by repeatedly drying it.

Under the belief that "the ingredients are the lifeblood of Teppanyaki," the chef himself runs the restaurant. We mainly purchase organic and reduced-farm vegetables from contracted farmers in Aso, Kumamoto, Niigata, Hida, and other areas. We often receive happy comments from our customers, saying, ``I want to eat vegetables, so I come to Sho.'' During the course, you can enjoy over a dozen types of vegetables, including seasonal and rare vegetables, in small portions.
