ChefMasamichi Ohata: Realizing the ideal of Edomae sushi in Osaka
Born in Hyogo Prefecture in 1971. While working part-time at a restaurant during his student days, he met his mentor and embarked on the path to becoming a chef. Fascinated by the depth of sushi, he trained at traditional Japanese restaurants and sushi shops in Osaka. After that, he started up a restaurant before going independent. With an extraordinary spirit of inquiry, he continues to pursue the "Edomae sushi" that only a Kansai person can make, such as using three different types of rice depending on the topping.

The dedicated chef uses three different types of sushi rice, each with a different flavor: "White," which was created to suit the sushi culture of the Kansai region; "Red," which has a flavor that eliminates sweetness with only vinegar and salt; and "Rose," which has a complex and deep flavor that combines red vinegar and rice vinegar. Combined with the finest ingredients sourced from all over the country, a single dish is born. He also uses several different types of nigiri and tsume, giving a glimpse of his thorough attention to detail. His rare sense of balance is also the reason why he captivates gourmets.

Sushi Ohata is located on the outskirts of Kitashinchi, one of Osaka's most popular shopping districts. When you pull the white noren curtain open, you'll be greeted by a dignified atmosphere.
