誇張なく予約の取れないお店なので、ご相伴にあずかれる機会があればぜひおうかがいされてみてください。
中津駅を東に3~400メートルほどいったところにあり、エリア的には豊崎にあるをにくさん。
カウンターで木村さんの変態的な火入れと最高のお肉をライブ感たっぷりで楽しめます。
本当にお肉が大好きで大好きで、そして類を見ないくらい研究熱心なのが見るだけで伝わってきます。
調理法も既存の方法にとらわれず、定番のハチカツはハチノスを柔らかく煮込んで米粉の衣をカリっとあげた料理なのですが、トマト風のソースだとイタリアンのトリッパになるし、今回はすりながしのような玉ねぎのソースで和食を感じました。
火入れにしても温度やオーブン、炭、藁焼きなどを駆使されて一つのお肉になんと4回も焼き方を変えたりされています。
お人柄もすばらしく、毎度毎度楽しく、唯一後悔するのがお腹いっぱいになりすぎて後半のお料理を万全の状態でいただけないところです笑
