あべのハルカス美術館で2月に開催されていた「カラバッジョ展」の展示を観た後のランチで訪れた12階にある江戸前の鰻が戴けるお店「江戸川」さんに伺いました
暖簾をくぐると日本料理店らしい落ち着いた店内で
テーブルとテーブルの間の距離が程よく静かできちんと整えられた雰囲気です

「何切れ」という言葉でランク分けするのは関東人でも初めて聞きましたが寧ろ分かりやすくてありかもしれませんね
江戸前は切腹を意味する腹開きは避けられ背開き
一度焼いて蒸してふっくら柔らかくしてから又焼を入れてタレに潜らせる
関西との大きな違いはこの２つです
お茶を戴きながらカラバッジョ展のパンフレットを開き本物の絵画の迫力と感動を甦らせます
ハルカス美術館自体も思いの外広く観やすいレイアウトの美術館だと思いました
それから割と早く出されたお重、蓋を開けるときれいな照りです
身自体はやや薄めな気がしますが焼きは程よく脂がのりしっかりとした鰻の味が伝わりました
私はもう少し甘いタレが好きですが比較的関西の甘味を押さえたタレに慣れている方に合わせているみたい
追加のタレをかけると白米にじんわりと染み渡りしっとり染み込んだご飯と鰻の味はやはり格別、
あっという間に重箱の隅まで食べ進めていました
肝吸いも控えめな上品な味わい、久しぶりの鰻を堪能させていただきました
