ChefColeman Griffin: Experience of three-star restaurants in the US and two-star restaurants in Japan
The chef is Coleman Griffin, originally from the United States. He trained as a sous chef at Meadowood (three stars) in Napa Valley and Benu (three stars) in San Francisco. In 2019, he came to Japan to become the sous chef at INUA in Iidabashi, Tokyo, a sister restaurant of the world-famous Danish restaurant Noma, which had been awarded two stars. In 2021, he was appointed chef at SOWER.
Food A unique experience that reinterprets the history and food culture of Lake Biwa
Using an abundance of local ingredients such as lake fish, wild vegetables, and game, the restaurant offers dishes that can only be enjoyed here, reinterpreting the history and food culture of Lake Biwa and Oku-Biwa. The restaurant resembles delicate Japanese Cuisine, but also has elements of French cuisine cuisine and a modern Nordic side reminiscent of restaurants such as Noma and INUA. Lake Biwa, home to a thriving fermentation culture, has a rich history of traditional foods, including game and wild vegetable dishes, as well as crucian carp sushi, and the restaurant offers courses inspired by these.

SOWER is Restaurants located inside L'Hotel du Lac, which means "lake hotel" in French. You can spend a luxurious time away from the hustle and bustle of everyday life while looking out at the nature of Oku-Biwako. The design of the space was handled by Teruhiro Yanagihara's TERUHIROYANAGIHARASTUDIO. There is a dining area with a counter surrounding an open kitchen decorated with Shigaraki ware, as well as semi-private rooms, which can be used according to the needs of the guests. At the counter seats, where you can watch the live cooking scene, you can enjoy conversation with the staff, who can also speak English for overseas guests. Anniversary cakes suitable for special occasions can also be reserved.
