100% buckwheat noodles made with just water and buckwheat flour
This soba restaurant serves not-dry 100% buckwheat soba and tender duck dishes cooked using a vacuum process. |
This is where I went today. This is the Mabuchi branch of Sobahan, one of the most popular soba restaurants in Suruga Ward. I got there around 12 o'clock on a weekday, just before the wait, but it was so popular that it was almost full. Their specialty is the duck meat Teppan-yaki "Kamotetsu", but since I had eaten it at the main store in Toro before and I wasn't in the mood for meat, I decided to go here this time. ・Yamaimo Ruins 1,500 yen/tax included ・Medium serving 150 yen/tax included We arrived in about 15 minutes. The soba was 100% buckwheat, with plenty of grated yam, and a poached egg. I didn't notice it because I wasn't looking closely at the image on the touch panel, but I thought it was the yolk of a raw egg. Well, let's eat. The soba was 100% buckwheat, with just the right amount of firmness, and a strong aroma that wafted through my nose. It was delicious. The grated yam was very sticky, so rather than sticking to the soba, I imagined it as something to eat with the soba. The soup was rich with the aroma of bonito, but the generous amount of grated yam and poached egg made the flavor a little lighter. I think a thicker soup would go better with this. I think they should have used egg yolk instead of a poached egg. The white part of the soba seemed to cancel out the grated yam. The medium serving was about 80% full, so the regular size might be a little small. As for the soba soup, it was rich and thick, and I would like to rate it highly. It was delicious until the very end. Thank you for the meal. The prices are a little high overall, but since 100% buckwheat soba is the default, I guess it's reasonable. There are many menu items to enjoy. After all, looking around, I wanted to eat Kamotetsu, so I would like to come back to eat it again. *At the time of visit → Rating 3.38
