Chef Nishioka Hidetoshi Born in Tokyo in 1972. After graduating from high school, he worked at a Japanese Confectionery shop for a year before going to culinary school. While attending school, he spent five years training under the late Wang Hui-ren of the famous Chinese restaurant "Chefs". After that, he experienced Spanish Cuisine and Italian cuisine, and Japanese-style meal in New Zealand before joining "Chefs". After leaving the company, he became involved in restaurant consulting and learned about the operation of the restaurant. He opened "Chinese Tapas Renge" in August 2009. It closed in 2015, and he opened "Renge equriosity" in Ginza.
