ChefHidetoshi Nishioka: Nishioka cuisine woven with a gentle sensibility
Born in Tokyo in 1972, Nishioka worked at a Japanese Confectionery shop after graduating from high school, then went on to culinary school. While attending school, he studied under Wang Hui-ren of the Shanghai restaurant "Chefs" for about three years. With a flexible mindset, Nishioka deepened his knowledge of Spanish Cuisine, Italian, and Japanese-style meal, before returning to hone his skills at "Chefs". In 2009, he opened "Chinese Tapas Renge". In 2015, he moved the restaurant to Ginza and restarted it as "Renge".
Food Tradition and innovation come together in a flexible and light Chinese cuisine
The restaurant has counter and table seating, creating a warm and relaxing space. The atmosphere is relaxed, allowing you to enjoy delicious food without having to be tense. The best seats are at the counter, where you can watch Nishioka work carefully in the kitchen, and how seasonal ingredients are constructed into perfect dishes. Nishioka respects tradition but does not stick to it too much, adding his own sensibilities to his dishes, which have a light flavor that can be enjoyed with a glass of wine.

The basis of the umami of Chinese cuisine is "oil" and "salt." Nishioka asserts this, and makes full use of 10 types of oil and 8 types of salt to bring out the flavor of the ingredients to the fullest. The oils used are only highly refined vegetable oils such as hazelnut oil and walnut oil. Seasonal ingredients include sometimes striped porgy delivered by fishermen, and in winter, tiger bugu is sometimes added to the course. Of course, high-quality ingredients such as crab and shark fin are also served as dishes that are characteristic of the original "Nishioka cuisine."
The use of oil and salt has become more mature. Nishioka Chinese cuisine is on a new level.
