Food Shari with a focus on nigiri and temperature - using Koshihikari rice from Uonuma, Niigata Prefecture -
The important thing about Shari Nigiri is that it doesn't fall apart before you put it in your mouth, and that the sushi rice spreads fluffy in your mouth as soon as it hits your mouth. (Squeeze the rice so that there is a cavity in the center.) This will create a good balance with the rice and bring out the best flavor from each other. We offer freshly made food that is at the same temperature as human skin.
