〈特徴〉
・日本酒フリーフローで、お姉さんが毎回日本酒の説明をしてから注いでくれる
・赤シャリで、柔らかく空気を含んだ握りで、甘く優しい
・シャリの量はやや少なめ(個人的には丁度良い)
・炙り方のバリエーションが豊富で、醤油を留めるための炙り、香りを出すための炙り、と火加減とあて方の工夫が色々あるらしい
・どこ産の魚か提供時に教えてくれる
〈今回の感想〉
◎ヒラスズキの旨みと柚子胡椒の香り、シャリの柔らかさが相性最高だった
◎大トロは筋多めに見えるけど、包丁を入れているそうで、筋を感じず美味しかった
△カンパチとウニがかなり冷たい印象があった。味もシャリも良い分勿体なかった
△小肌の〆時間を決めているわけではなく、〆たままにしているそうで、今回は時間が長かったのか、酸味が強く感じた。
