A single variety from a single origin. Yukihotaka (Koshihikari) in Kawaba Village, Gunma Prefecture. Koshihikari in Kyotango City, Kyoto Prefecture. Lucky rice from Iinan Town, Shimane Prefecture. By visiting rice-producing areas, we understand the environment in which the rice was grown, and we cut rice with that background in mind. By using rice from different regions and combining it with three types of vinegar (white, rosé, and red), we maximize the original flavor of the rice.
